Country Style Catfish.
1/4 a cup of margarine or butter melted. 1/2 cup all purpose flour. 1/2 cup of cornmeal. 1 teaspoon of dried rosemary leaves, crushed. 1/2 teaspoon of salt. 1/2 a teaspoon of cayenne. 1 and 1/2 pounds of fillets Catfish, skin removed. Vegetable oil.
First melt the margarine or butter in a small mixing bowel. In another shallow dish, mix the flour, cornmeal, rosemary, salt and cayenne. Dip the catfish fillets in the butter first and then coat them with the mixture you made.
Take a large frying, fill the pan 1/4 of the way, heat the oil in a medium heat. Fry for about 9 minutes or until the fillets are golden brown. Drain on a paper towel in a plate and serve hot.
